In the dog days of summer, (especially the particularly hot and humid days,) southern style comfort food sure hits the spot. Last night I busted out one of my all time favorite vegan cookbooks, Hot Damn & Hell Yeah / Dirty South Cookbook. Possibly one of the only “split” cookbooks in existence with two different hush puppy recipes, its simple, quick, and budget conscious. The book itself is $7.00 and well worth double. This is also one of the only Vegan cookbooks I know of that has several Ethiopian dishes, (including a Berbere spice mix)
One of my favorite recipes is the Biscuits and Gravy. Do yourself a favor, for the sausage get a brick of Upton’s Natural chorizo-style. Cut it into 4 pieces and you will have some killer spicy vegan sausage biscuits for skate-snacks.

2C. Flour
1T. Baking Powder
1tsp. salt
3 T. Vegan Margarine
2/3 C. soy milk mixed with 2tsp. Lemon juice.
Preheat oven to 400F and lightly grease a baking tray
Combine flour, baking powder, and salt in a medium bowl
Cut vegan margarine into flour mixture until you have a crumbly mixture
Gradually stir in enough soy milk to form a dough that is moist but not sticky. (If it sticks to your fingers its too wet)
Remove dough from the bowl and knead a few times on a lightly floured surface. Roll out to a 3/4 thickness and cut into circles using an overturned glass.
Bake in oven for 10-15 minutes until lightly browned.
