Vegan Rice Crispy Treats from Chicago Vegan Foods

Chicago Vegan Foods, makers of Dandies, Teese, and Temptations Vegan Ice Cream posted this awesome recipe for Vegan Rice Crispy Treat CupCakes. When you think about it, this is the perfect size for a rice crispy treat. The shape also makes it the perfect vessel for some vegan buttercream.  Take these to the skate park and you have yourself the perfect skate snack.

Vegan rice crispy treats (made with Dandies Vegan Marshmallows)

1 bag of dandies + 2 tbsp of margarine. Melt slowly over low’ish heat (or microwave for about 90 seconds). Stir it up to be smooth. At this point I like to add maybe another 1/3 to 1/2 bag of Dandies so that they partially melt but still stay relatively whole in the treats. Makes it more gooey and awesome. Then add 5-6 cups of crisp rice cereal and mix together. Press into a dish (or a muffin tin as I did here). I made a normal buttercream frosting and iced the top of them. Nothing fancy or crazy.
